Homemade Coconut Rice Milk

Easy and delicious homemade Coconut Rice Milk with only four ingredients: water, rice, coconut milk and a pinch of sea salt. I often buy my coconut rice milk but buying plant-based milks can get expensive. I have tried to re-create the flavours of my favourite, unsweetened Coconut Rice Milk and I am very happy with the result. The most important part is draining the milk through a very fine sieve or cheese cloth otherwise it can get grainy. Limonada Suiça

I recently enjoyed this wonderful Brazilian lemonade, Limonada Suiça, at one of my favourite breakfast/brunch places in Amsterdam. It’s very easy to make and it’s incredibly refreshing on a warm summer day. You do need a solid blender that’s up to the task as you’re blending a whole lime (preferable organic) skin and all. By using the whole lime, including its peel, you are benefiting from all the lime’s nutritional benefits. Most of the vitamin C is found, not in the juice, but in the peel. Strawberry Rhubarb Parfait

This vegan Strawberry Rhubarb Parfait is rich and indulgent and contains all my favourite summer flavours. Strawberries and rhubarb are in season now and I cannot get enough of them. Rhubarb is quite tart and tangy on its own. The best way to eat rhubarb is to add ripe sweet fruits like strawberries, apples, peaches or cherries. Rhubarb and strawberry is a classic combination. Vegan Carrot Halva
