This Mango Pico de Gallo is clean and refreshing. It’s amazing with corn tortilla chips or tacos. I love the freshness of this fresh mango salsa. Mango, lime and cilantro are some of my favourite ingredients and they work so well together. The juicy and fragrant mango adds a lovely sweetness and adds to all the summer flavours. Limonada Suiça

I recently enjoyed this wonderful Brazilian lemonade, Limonada Suiça, at one of my favourite breakfast/brunch places in Amsterdam. It’s very easy to make and it’s incredibly refreshing on a warm summer day. You do need a solid blender that’s up to the task as you’re blending a whole lime (preferable organic) skin and all. By using the whole lime, including its peel, you are benefiting from all the lime’s nutritional benefits. Most of the vitamin C is found, not in the juice, but in the peel. Summer is here! This Watermelon Mint Feta Salad celebrates summer and is really refreshing on a hot day. I love the salty-sweet combination of the watermelon and feta with the crisp mint and the slightly bitter baby Swiss chard. Cilantro Lime Hummus

This Cilantro Lime Hummus is zesty and refreshing. The lime and cilantro (coriander) add a lovely freshness and the chili adds a bit of heat. Hummus is great on its own but I love eating it with a nice salad or on some gluten-free crackers as a quick and easy snack. It’s also a great party dip for fresh veggies, like bell pepper, celery and baby tomatoes. It’s a great dip for tortilla chips too.
