Radicchio is one of my favorite winter greens. Hearty, slightly bitter radicchio and sweet refreshing romaine lettuce are combined with walnuts, celery and pomegranate seeds. The pomegranate and celery add crunch and freshness. The Date Balsamic vinegar softens the bite of radicchio and walnuts. Pumpkin seed oil makes a great winter salad dressing with its nutty flavor.
