This Hearty Winter Salad with radicchio, pumpkin oil and walnuts is great on a cold winter day. Although it’s almost spring, winter greens such as radicchio are still in season. Radicchio is one of my favorite winter greens. Hearty, slightly bitter radicchio and sweet refreshing romaine lettuce are combined with walnuts, celery and pomegranate seeds. The pomegranate and celery add crunch and freshness. The Date Balsamic vinegar softens the bite of radicchio and walnuts. Pumpkin seed oil makes a great winter salad dressing with its nutty flavor. It works surprisingly well with the sweet Date Balsamic Vinegar. This is one the best salads I have had in a long time. Enjoy this Hearty Winter Salad!
Ingredients
- 1 cup of radicchio leaves
- 2 stalks of celery, finely chopped
- 5 leaves of romaine lettuce
- 1/3 cup of walnuts
- 1 pomegranate seeds
- sea salt & freshly ground black pepper to taste
Dressing
- 3 tbsp pumpkin oil
- 1 tbsp date balsamic vinegar
Instructions
- In a large salad bowl mix all salad ingredients, except for the walnuts and pomegranate seeds
- Make the dressing in a separate jar
- Sprinkle dressing over the salad and add walnuts and pomegranate seeds
- Season with pepper and salt
