Homemade Coconut Rice Milk

Easy and delicious homemade Coconut Rice Milk with only four ingredients: water, rice, coconut milk and a pinch of sea salt. I often buy my coconut rice milk but buying plant-based milks can get expensive. I have tried to re-create the flavours of my favourite, unsweetened Coconut Rice Milk and I am very happy with the result. The most important part is draining the milk through a very fine sieve or cheese cloth otherwise it can get grainy. The naturally occurring sugars in the rice and coconut milk give this Coconut Rice Milk a delicious sweet flavour. Read More

Risalamande

Risalamande is a traditional Danish rice dessert based on rice, cream, and almonds served with hot cherry sauce. It’s basically rice pudding with almonds and a cherry sauce. I was inspired when I saw a version of a healthy risalamande come by on the Instagram of @Annaeiholm. You can find her recipe here. It’s usually made with dairy. Anna’s Risalamande looked so delicious that I decided to create a dairy-free version for those of you out there who are sensitive or intolerant to dairy.Read More

It makes a great warm breafast on a cold morning or a nice treat on a lazy afternoon, sipping a cup of hot tea. Cooking this Blueberry Banana Bread fills your kitchen with the wonderful aromatic smells of cinnamon and cardamom -comforting and spicy. I like to serve my banana bread with a few slices of banana, a few blueberries and a sprinkle cinnamon on top! Read More

It’s crazy delicious and I am pretty sure once you have tried it that you are hooked and cannot think of something else for at least a while. I can’t really pin-point why I love coconut yoghurt so much. But it comes really close to my version of bliss: it’s sweet, tangy and so refreshing. Read More

Green Power Soup

This Green Power Soup is a heart-warming version of a high-nutrient green juice. When it’s so cold outside, I find it hard to stomach a cold, green juice. But I don’t want to go without that super plant power of a great green juice either. So here’s an heart-warming green power soup that will not only keep you warm on a cold day but will help feed every single cell of your body and eliminate waste. I have used spinach and broccoli in this one but you can add kale, Swiss chard, purslane or any other green leafy vegetable to your taste.Read More

Sweet Potato Brussels Sprouts Curry

This Sweet Potato and Brussels Sprouts Curry is amazing. I love a good Thai curry but nothing beats making your own curry paste. It’s easy to buy ready-made Thai curry paste but making your own paste adds so much more freshness, flavor and fragrance to the dish. The inspiration for adding the Brussel sprouts and apples to this curry came from an amazing Thai curry recipe I saw on The Green Kitchen. They are right. Brussels sprouts and apples might seem unconventional in a curry, but they fit in perfectly.Read More
