Blueberry banana rice porridge

This blueberry banana rice porridge is a delicious and super healthy breakfast option. This is what I am living on in the morning these days, when it’s below freezing point. There’s something particularly nurturing and loving about preparing this for myself on a cold morning. I get cold very easily and don’t enjoy walking into a cold and icy living room in the early morning. But this breakfast porridge is what gets me going. It warms me and wakes me up instantly. This blueberry banana rice porridge such a lovely start of the day as the whole house fills up with the smell of cinnamon and banana. I regularly mix up the ingredients, but always include banana and cinnamon in mine, but you can get creative by add different fruits and spices.

Ingredients

1 cup brown Basmati rice (pre-cooked)
1 cup almond milk
2 tbsps dried cranberries
1 tsp cinnamon
1 tbsp date syrup
1 banana finely chopped
½ cup blueberries (frozen)

Steps

I boil a pack of brown Basmati rice (500 gr) at the beginning of the week so I have enough for a few days. I use about 1 cup of rice for myself in the morning, Put 1 cup of the pre-cooked rice in a small pot on a low heat, add the almond milk and the other ingredients and allow to simmer for 5-10 minutes until all ingredients are soft and it smells delicious. Enjoy this healthy and nutritious start of the day!
