Chioggia Beet Carpaccio

This Chioggia Beet Carpaccio with arugula and fresh goat’s cheese balls is such a beautiful and impressive starter. It’s bright and colourful and a real party for your eyes. The pink-white stripes of the chioggia beets contrast beautifully with the white goat’s cheese and green arugula. Due to the pickling the sturdy chioggia beets get a soft but still firm texture which creates a lovely bite in your mouth. The earthiness of the beets is transformed into a more subtle flavour, sweet, refreshing and tangy. The sweet, tangy flavour of the beets combines really well with the soft goat’s cheese, citrusy thyme and bitter arugula. Read More

Red Rice Caper Sweet Potato Bowl

This super delicious and hearty Red Rice Caper Sweet Potato Bowl is inspired by a roasted root vegetable dish in Ottolenghi’s cookbook Plenty. I love the sweetness of the caramelised root vegetables and the freshness and acidity of the dressing and herbs. I have been eating a lot of roasted veggies lately at home lately, in many forms, shapes and variations, but this is my winning dish. This is a great dish for fall coming home on a a cold, rainy evening. It’s my idea of comfort food! Read More

Pickled Beet Carpaccio with Feta

This Pickled Beet Carpaccio with Feta celebrates the beauty of seasonal produce. It’s a beautiful fresh summer salad that is can be enjoyed on its own or with some slices of nut or olive bread. Pickling is a great way to ‘cook’ your vegetables while preserving most of the nutrients in the vegetables. Pickled vegetables are also more easily digested than raw vegetables and are a great way to eat ‘raw’ when you have issues digesting raw food. Read More

That lovely soft, buttery texture and that beautiful smoky, sweet flavour. I love the combination of flavours in this Roasted Eggplant Pomegranate Dip. It’s great with a simple green salad or some fresh home-made bread. Read More

Pomegranate Figs Goat Cheese Salad

I love this Pomegranate Figs Goat Cheese Salad and I love fig season! Today I saw the first Italian figs of the season in my local organic store and I couldn’t wait to get my hands on them and make this salad. I love fresh figs. I think they are about my favorite fruit in the world. Fresh figs are great on their own but I love combining them with a soft goat’s cheese. In this recipe I used a beautiful French Goat’s cheese with truffles from the Perigord. Read More

Vegan Raspberry Thyme Sorbet

OMG. This Vegan Raspberry Thyme Sorbet is heaven. Technically, it’s a sorbet and not an ice cream. Plus it looks like a granita as it does not scoop well. But what’s in a name. It tastes absolutely amazing. It’s vegan and it’s raw. It’s not too sweet, as I like my sorbets to have a bit of a tangy taste. The fresh, juicy raspberries are the first things you’ll notice in this lovely sorbet. The Thyme and the Mint in the honey add a distinctive herbal and pungent flavor. Do need I to say more?Read More
