All about olive oil

All about olive oil – Last Tuesday I spent an afternoon tasting beautiful olive oils at Restaurant Merckelbach in Amsterdam. The event was hosted by Olivomio, a local business with a passion for slow food and olive oil. Olivomio sells a wide range of high-quality organic olive oils from small, independent sustainable farmers from Italy, Spain and Greece. I first came across Olivomio’s olive oils at the Lindenhoff market where I bought an extra virgin oil specifically for the preparation of sweet dishes like my Bergamot Polenta Cake or Lemon Lavender muffins.Read More

Smoky Harissa Pepper Soup

This Smoky Harissa Pepper Soup shows how delicious simple ingredients like red bell peppers and tomatoes become when you love them up. This soup takes time, not in the sense that there’s a lot of hands-on cooking. The Roma tomatoes are slow-roasted in the oven until caramelised, sweet and delicious. The red peppers are charred, which gives them a smoky, sweet flavour. The fresh chili peppers and the blend of spices like cumin, caraway and paprika gives this soup a nice bit of heat. Read More

Pomegranate Figs Goat Cheese Salad

I love this Pomegranate Figs Goat Cheese Salad and I love fig season! Today I saw the first Italian figs of the season in my local organic store and I couldn’t wait to get my hands on them and make this salad. I love fresh figs. I think they are about my favorite fruit in the world. Fresh figs are great on their own but I love combining them with a soft goat’s cheese. In this recipe I used a beautiful French Goat’s cheese with truffles from the Perigord. Read More

Fresh Summer Gazpacho

This fresh summer Gazpacho reminds me of hot summers in Spain. Gazpacho is one of my favorite dishes. This Gazpacho with sweet pointed red peppers, fresh chili, scallions and basil bursts with the flavors of summer. It is so simple and easy to make and very refreshing on a hot day. This soup is ready in under five minutes. The only thing you need to do is to chop up your veggies in big chunks and throw them in a blender. I usually have it for lunch or as a starter. I enjoy it on its own or with some lovely sour-dough bread.Read More
