Grød in Holland

On my visit to Copenhagen last year I fell in love with the porrigde bar, Grød. Grød is Danish for porridge. If you ever get bored with your daily bowl of oatmeal, Grød is the place to go. Grød’s mission is to redefine porridge and to get everyone to enjoy porridge. Last time I was in Copenhagen I packed a whole suitcase with porridge mixes and toppings like freeze-dried buckthorn and raspberries. This light and refreshing Green Quinoa Salad combines the earthy and pungent flavours of the Middle-East with the freshness of green herbs. The fresh herb paste made with fresh parsley, dill and fresh mint and extra virgin olive oil is really the star of this dish. It transform the quinoa into something completely different. Sticky Sweet Quinoa Salad

This Sticky Sweet Quinoa Salad with balsamic shallots is very simple in its use of ingredients but has so much depth of flavour. It’s also quick and easy to make. A fluffy bowl of quinoa is ready in less than 15 minutes. I added chickpeas from a can and, some chopped sweet pointed peppers and baby tomatoes. The shallots are cooked in balsamic vinegar with some coconut palm sugar until they become caramelised and sweet. The sweet, sticky shallots and the left-over syrup serve as a vinaigrette.
