Kale Pomegranate Spelt Salad

This hearty Kale Pomegranate Spelt Salad is super delicious and combines three of my favourite ingredients: whole spelt berries, shredded Dinosaur kale and pomegranate seeds. This week I saw the first Dinosaur kale or cavolo nero back in stores again. In Europe, you can often find cavolo nero in stores from July to Januari. The crisp sweet pomegranate seeds are the perfect addition to this salad, the freshness of the pomegranate seeds works really well with the chewy spelt berries and hearty, slightly bitter taste of kale. Spelt is high in protein and fiber and has a lovely nutty flavour and chewy bite. Read More

Persimmon Avocado Kale Salad

This refreshing and brightly coloured Persimmon Avocado Kale Salad is gorgeous, healthy and just perfect for the holidays. Persimmons are in season right now and I cannot get enough of them. The subtle sweetness of the persimmons works really well with the slight bitterness of the kale. I just love the fresh taste and feel of this salad: crispy pomegranates, refreshing persimmons, crunchy fennel, creamy avocado, fresh goat’s cheese and a zesty, slight sweet lemon-honey dressingRead More

These Za’atar Spiced Kale Chips are sweet, salty and delicious. They are a healthy snack option if you are craving a crunchy nibble. You can enjoy them anytime guilt-free! Minestrone For A Rainy Day

This Minestrone for a Rainy Day is the perfect dish at the end of the summer. As fall is creeping in upon us, it’s time to start cooking more warming foods. The temperatures at night have dropped and our evenings are getting darker and darker. Yesterday after a few bike rides through town, my clothes and shoes were soaked right through as rain came pouring down from the sky. These relentless rains are the first tell-tale signs of autumn. Cold weather calls for warming foods. This bowl of soup is my idea of comfort food at the end of a long cold and rainy day.Read More

Mediterranean Dinosaur Kale Salad

This simple recipe for Mediterranean Dinosaur Kale Salad combines the flavors of the Mediterranean with the super food power of kale. I am a big fan of Dinosaur kale and we eat it at least twice a week at our home. It’s such a simple pure ingredient, easy to prepare and has so many great health benefits. Kale has been called a nutritional power house for a reason. It’s high in vitamins (K, C and A), packed with powerful antioxidants and a powerful anti-inflammatory food and there’s so much more. Alkalinity Booster Juice

This Alkalinity Booster Juice is divine! I came upon it by accident while throwing my left-over veggies and fruits in the juicer. It’s so delicious!! I have juiced the peel of the oranges which gives it a slightly bitter taste but that’s where all the Vitamin C is. The fragrant Bergamot orange adds a special touch to this juice. It’s somewhere in between a lemon and an orange. I love its perfumy citrusy smell. There’s a good reason why it’s used a lot in perfumes. Read More

Chickpea Crêpes With Mushrooms

These chickpea crêpes with tofu, kale and mushrooms are a spin on one of my favorite Indian dishes, a North Indian dish called Chole which is basically a Chickpea Curry. Instead of using chickpeas in the curry, I have made crepes with chickpea flour and fresh coriander. I have made a spicy tomato curry of tofu, kale and mushrooms. It still has that delicious spicy flavor of the original dish but is a healthier version of the one that I used to make. Read More
