Pomegranate Bulgur Salad

This Pomegranate Bulgur Salad with salted ricotta is a tasty light meal for a summer evening, picnic or potluck. It’s not just a very delicious and refreshing meal on a hot summer evening but it’s also a party for the eye with all the bright colours and different textures. The snow-white colour of the salted ricotta strikingly stands out in the salad against the vivid green colour of the fresh herbs, the pink-red color of the pomegranate seeds and the light green colour of the cucumber and celery. In terms of flavour, the sweetness of the pomegranates and dates contrast beautifully with the salty crumbly, salty ricotta, and the nutty bulgur.Read More

Halloumi Apricot Spelt Salad

This Halloumi Apricot Spelt Salad with an Orange Chili Vinaigrette is a super delicious and refreshing salad. It can be served as a full meal or as a nice appetizer. The Orange Chili Vinaigrette is fresh, sweet and just a little spicy, which adds a lovely heat to the salad. Recently, I have grown really fond of halloumi cheese. Halloumi is a salty, brined cheese, often made with sheep or goats milk. It’s low-fat and really tastyRead More

Sweet Potato Black Bean Tacos

These California-style Sweet Potato Black Bean Tacos are easy to make and utterly delicious. During my trip to California I fell in love with Cal-Mex, the Californian interpretation of Mexican food. Enjoy these crispy Sweet Potato and Black Bean Tacos. Serve them with pickles and fresh cilantro, Mango Pico de Gallo or Fresh Tomato Salsa or homemade guacamole.Read More

Baby Spinach Pomegranate Salad

This Baby Spinach Pomegranate Salad is inspired by my recent trip to Athens. I was in Athens for the European Yogi Nomads event and we went to the most amazing restaurants. My most memorable dish was a delicious salad with baby spinach leaves, pomegranate and roasted almonds. I have tried to re-create my favourite salad at home. This time I couldn’t find baby spinach so I used lamb’s lettuce instead. Both spinach and lamb’s lettuce work really well in this salad.

Smoky Harissa Pepper Soup

This Smoky Harissa Pepper Soup shows how delicious simple ingredients like red bell peppers and tomatoes become when you love them up. This soup takes time, not in the sense that there’s a lot of hands-on cooking. The Roma tomatoes are slow-roasted in the oven until caramelised, sweet and delicious. The red peppers are charred, which gives them a smoky, sweet flavour. The fresh chili peppers and the blend of spices like cumin, caraway and paprika gives this soup a nice bit of heat. Read More

Cilantro Lime Hummus

This Cilantro Lime Hummus is zesty and refreshing. The lime and cilantro (coriander) add a lovely freshness and the chili adds a bit of heat. Hummus is great on its own but I love eating it with a nice salad or on some gluten-free crackers as a quick and easy snack. It’s also a great party dip for fresh veggies, like bell pepper, celery and baby tomatoes. It’s a great dip for tortilla chips too. I love to serve this when I have lots of friends coming over and I am serving food mezze-style in small plates. Enjoying food is all about sharing it with family and friends. Read More

Roasted Red Beet Hummus

This Roasted Red Beet Hummus is inspired by a birthday party I went to last weekend. My friend loves beet hummus and he had a really yummy store-bought red beet hummus on the dinner table. As I love all my foods fresh and I avoid packaged foods as much as I can, I thought I’d try to recreate my own recipe with fresh roasted beets and herbs. The store-bought one is pretty good but I am pretty sure ‘I beet it’ with this recipe (pun intended). Read More
