Radicchio Fennel Spelt Salad

This Radicchio Fennel Spelt Salad is the perfect winter salad. It can be enjoyed both warm or cold. Radicchio is wonderful in any winter salad. I love it raw, thinly sliced in a salad, but lately I have been braising it in the oven with garlic, rosemary and balsamic vinegar. It’s the best thing ever. Hearty Winter Salad

This Hearty Winter Salad with radicchio, pumpkin oil and walnuts is great on a cold winter day. Although it’s almost spring, winter greens such as radicchio are still in season. Radicchio is one of my favorite winter greens. Hearty, slightly bitter radicchio and sweet refreshing romaine lettuce are combined with walnuts, celery and pomegranate seeds. The pomegranate and celery add crunch and freshness. The Date Balsamic vinegar softens the bite of radicchio and walnuts. Pumpkin seed oil makes a great winter salad dressing with its nutty flavor. It works surprisingly well with the sweet Date Balsamic Vinegar. This is one the best salads I have had in a long time. Enjoy!Read More
