This Cilantro Lime Hummus is zesty and refreshing. The lime and cilantro (coriander) add a lovely freshness and the chili adds a bit of heat. Hummus is great on its own but I love eating it with a nice salad or on some gluten-free crackers as a quick and easy snack. It’s also a great party dip for fresh veggies, like bell pepper, celery and baby tomatoes. It’s a great dip for tortilla chips too. This Sweet Red Pepper Fennel Soup celebrates the flavour of deep caramelised slow roasted veggies. The soup has a lovely sweetness to it. Roasting enhances the naturally sweet flavors of the Roma tomatoes, fennel and bell peppers which browns and caramelizes the veggies. I love this deep, dark caramelization that naturally occurs when you slow roast. It takes almost an hour to prepare but requires only very little food preparation and is so easy to prepare.
