This Spinach Feta Omelette with fresh basil is super delicious and very quick to prepare. It’s great for breakfast or lunch and even as a light dinner with a green salad on the side. To cook the omelette, I used a method that is often used in the Provence, which involves turning your omelette around instead of folding it in half. Summer is here! This Watermelon Mint Feta Salad celebrates summer and is really refreshing on a hot day. This Hearty Winter Salad with radicchio, pumpkin oil and walnuts is great on a cold winter day. Although it’s almost spring, winter greens such as radicchio are still in season. Radicchio is one of my favorite winter greens. Hearty, slightly bitter radicchio and sweet refreshing romaine lettuce are combined with walnuts, celery and pomegranate seeds.
